This is our flavor tweaks of the traditional lemon curd recipe.
Ingredients
- 4 egg yolks
- scant 1/2 cup of white sugar
- zest of 2 good sized lemons
- 2/3 cup of lemon juice
- 6 tbsp of salted butter
Steps
- Set up double boiler (glass bowl over pot with 2 inches of water). Bring to boil then turn down to 4.
- Add yolks, sugar, zest and lemon juice to the double boiler.
- Begin stirring with a silicon whisk and continue until the curd reaches 170*F.
- Remove from double boiler and whisk in the butter.
- Put in jar to set in fridge.
- Yields 1.5 cups
